moosubi was introduced to the Portland Food hall in summer of 2025. Our tiny little booth has been home to many yummy creations by Chef and owner, Jasmine Rubenfield. Along side her is husband and co-owner of moosubi, Daniel Rubenfield. Together with their team of musubi professionals, they share a little taste of the islands in downtown portland.

musubi is a square rice snack. The most well known version of this is the spam musubi; which is a fried slice of spam on a rice block wrapped with a strip of nori seaweed. although we LOVE the classics, we also wanted to change it up! Looking for something tasty? Try our chicken katsu, it’s fried to perfection. Our chicken katsu is a moosubi favorite! Try it in our chicken katsu musubi or as a plate lunch. We offer a vegan version which is our tofu katsu.
