moosubi & shave ice was established in 2025. Chef and owner, Jazz, previously owned the mobile Hawaiian Filipino food business called Kalo Kitchen. The business ran predominantly at farmer’s markets and event during 2021 to 2024. Jazz grew up on the Big Island in a small town called Pa’auilo. Much of her inspiration derives from local ingredients that were produced in the Hamakua area. From cane sugar, vanilla, coffee, macadamia nuts, and much more; she hopes to continue sharing the stories of her home town and its ingredients with her fellow Oregonians.

During her time building Kalo Kitchen, musubis were the signature staple snack. The most popular iteration was the deep fried spam musubi. Offering unique flavors of musubi has always been our priority. From seared unagi, to matcha lavender shrimp tempura, we love pushing the envelope of our favorite rectangular rice snacks. Like red wine and beef, shave ice is the perfect pair to compliment musubi. We can’t wait for you to try our shave ice treats!

We have the exciting opportunity to open our first physical location at the Portland Food Hall in July of 2025 in downtown Portland. We hope to see you real soon!
